Shinsei Junmai Daiginjo
Established in 1677 being one of the oldest sake breweries in Fushimi, Kyoto. Yamamoto Honke was built on one of the 7 famous waters of Fushimi called Shiragiku Sui. Fushimi is located inland, and the transportation of goods relied primarily on waterways such as the Hori River and the Takase River. As a result, it was only after the development of transportation methods, with the rise of railways and automobiles in the Meiji era, that Fushimi became known as a prominent brewing region, second only to Nada. Around the beginning of the Taishō era, direct transactions with wholesalers in Tokyo began, expanding the sales network of "Shinsei" in the Kanto region where the brand became popular. The name Shinsei comes from the name of the flowering bud of rice thus giving the nickname of “Divine Flower”. This Sake pairs well with a wide variety of seafood and light flavor meats such as chicken or pork that is grilled and slightly salted.

Ingredients:
- 1.5 oz. Don Julio Blanco
- 2 oz. Filthy Paloma Mix
- 1 Splash of Soda Water
- 1 Grapefruit Wheel
- 3 Jalapeno Slices
Instructions:
- Combine Don Julio, Filthy Paloma Mix and Jalapeno slices into a cocktail shaker with ice and shake well.
- Rim the edge of the glass with salt
- Pot mixture from shaker into glass over ice
- Add a splash of soda water
- Garnish with a grapefruit wheel

SPICY CUCUMBER MARGARITA
1.5 oz. Casamigos Jalapeño Tequila
0.75 oz. Fresh Lime Juice
0.5 oz. Simple Syrup
3 Cucumber Slices
1 Dash Spicy Bitters or 1 Jalapeño Slice
Garnish Cucumber Wheel and Jalapeño Slice through Skewer
Combine all ingredients into a shaker. Muddle cucumber/Jalapeño. Add ice, shake vigorously and fine strain into a small rocks glass. Add fresh ice and garnish.

Hagi No Tsuyu Hyon-Chozo Junmai Ginjo
The Fukui Yahei Shoten tradition of brewing sake dates back to the mid-Edo period, over two and a half centuries ago. The name Hagi-no-tsuyu is said to have been bestowed on our brewery by the then-lord of the domain, and derived from the Japanese clovers (hagi) that bloom in abundance on the shores of Lake Biwa. We believe that a truly deilicious sake is something to be savored. We strive to brew Hagi-no-tsuyu as a sake both rich and smooth, with a flavor that can be appreciated more and more with every sip, and a fresh finish so that one never tires of drinking. This sake is a balanced, fresh, and smooth sake with a floral aroma and a clear, crisp finish. It pairs well with Butter sauteed bamboo shoots, Mountain Vegetable Tempura, Sashimi. And other Japanese light taste dishes.
